Our first turkey burgers! And let me tell you, these suckers are good! We love salsa, so actually ate all the salsa below between just the two of us for two burgers. If you have four people you're cooking for, I would recommend doubling the salsa ingredients (salsa, avocado, and cilantro). Of course, we are kinda crazy about salsa, so you may not need to. :) Roughly modified from a Cooking Light recipe. Great meal for one of these hot summer days!
Sorry for the smashed buns - they were toted back and forth from a cookout and I think may have gotten into a fight with the cooler.
On another note, with all this wedding planning being done, I have been finding myself at a lost during the past couple of evenings after work. In the past year, I feel like we hadn't had a single second to get bored. Well, my first boredom came along this weekend. Since I can't just do nothing, I quickly found a new hobby: interior decorating! I also decided to start a new blog to track my progress (as if keeping up with one wasn't enough). Mind you, I am not good at this whatsoever, so it will be an interesting adventure. If any of you have any great blogs or tips, pass them along my way!
Ingredients
- 1/4 cup salsa verde
- 1/2 an avocado, chopped
- 2 tablespoons chopped cilantro
- 2 slices wheat bread
- Cooking spray
- 1/2 cup finely chopped onion
- 1 cup finely chopped green bell pepper
- 1 tablespoon fajita seasoning
- 1 tablespoon tomato paste
- 1 pound ground turkey
- 1 egg white
- 4 whole wheat hamburger buns, toasted
- sliced onion
- sliced tomato
- lettuce
Directions
- Combine salsa verde, chopped avocado, and cilantro; set aside.
- Place bread in a food processor; pulse 10 times or until crumbs measure 1 cup.
- Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add onion and bell pepper; sauté 5 minutes or until tender. Stir in 1 and 1/2 teaspoons fajita seasoning. Cool.
- Combine breadcrumbs, onion mixture, remaining 1 1/2 teaspoons fajita seasoning, tomato paste, turkey, and egg white in a large bowl.
- Using damp hands, divide turkey mixture into 4 equal portions, shaping each into a 3/4-inch-thick patty. Heat pan over medium heat. Re-coat pan with cooking spray. Add patties; cook 4 minutes on each side or until done.
- Place 1 patty on bottom half of each bun. Top each serving with salsa mixture and any toppings you'd like. Top with remaining halves of buns and serve.

Burgers!! I've never had a turkey burger(or a veggie burger for that matter) before. I think it's about time!

OH MAN! Does that look great! I have not had a veggie burger in a while, I should OD on them for a week, and with that avocado, YUM!
Turkey is so much healthier than beef and hubby would love a veggie burger. The burger looks humongous!
i prefer spicy, texmex flavors when it comes to burgers, regardless of the meat involved. that said, turkey is a favorite. :)

This is my kind of burger. Love the use of turkey, and adding avocado to most things makes them possibly a hundred (or so) times better.
